The global impact of Martin Luther King, Jr.

Body
Americans pay homage to Martin Luther King, Jr. every January. While King was a renowned leader for his role in the American civil rights movement, his legacy extends beyond American borders. King began to speak about global issus after receiving the Nobel Peace Prize in 1964, visiting countries in west Africa and toured South America. King also spent a month in India, where he was inspired by Mahatma Gandhi's use of nonviolence when protesting British rule. King spoke out against apartheid in South Africa and condemned the use of nuclear weapons against Japan during World War II. He also was a critic of the Vietnam War. As a Christian minister, King's first priority was to promote the teachings of Jesus Christ, and King felt an obligation to do God's work around the world.

Processing game meat at home

Body
For many years, back in the day when I simply could not afford to drop my game off at a processor, I learned to do the processing at home. As a youngster, I watched my dad butcher hogs every winter and learned the basics skills necessary to transform game into ‘meat’ ready for the freezer. My duty was to haul water for scalding the hogs before scraping and do the ‘grunt’ work. As a young boy I didn’t relish hog killing day but looking back I did learn the skills that would later serve me well.
Processing game meat at home is not rocket science. Making cured, smoked meats such as this wild hog ham is really simple but it does require a bit of preparation. Photo by Luke Clayton
